INSTRUCTIONS
Drain artichoke hearts and reserve oil. Place onion, garlic and 1
tablespoon reserved artichoke oil in a one cup measure. Cover with plastic
wrap. Microwave at high (100%) until onion is tender; 2 to 3 minute&
Combine with egg, crumbs, milk, salt and mix well. Add beef and mix
thoroughly. Shape into 16 balls about 11/2 inches in diameter, shaping each
around a cube of cheese. Place in a single layer in a 1 2 x 8 rectangular
dish, or a 10 inch square casserole. Microwave at high (100%) 6 to 8
minutes, rearranging after half the cooking time. Drain. Pour pizza sauce
and remaining artichoke oil over meat balls. Cover. Microwave at high
(100%) 6 to 8 minutes, rearranging after half the cooking time. Add
artichoke hearts, cover. Microwave at high (100%) 3 minutes. Makes 4
servings.
