INSTRUCTIONS
Preheat the oven to 200 degrees. Heat a medium nonstick frying pan over
medium-low heat. Place 1 tortilla in the pan. SPrinkle with 1/3 cup of the
cheese, then top with 1/4 cup tomatoes, 2 tbsp olives and 1 tbsp basil.
Cook until the cheese is almost completely melted, about 1 minute. Place a
second tortilla over the top. Using a spatula, turn and cook until the
underside is lightly browned. Place in the oven to keep warm while making 2
more. Cut each into 8 wedges and serve hot.
