INSTRUCTIONS
Preheat oven to 450°. Sift flour and salt together. Beat eggs lightly, add
milk, and mix. Add dry ingredients and incorporate thoroughly. The batter
should be like heavy cream. Heat popover pans in oven until hot. Butter
generously. Fill each cup approximately half full. Bake for 20 minutes.
Reduce heat to 375° and bake 20 to 30 minutes more. Serve immediately.
Yield: 12 large popovers.
