INGREDIENTS

4 | 3-ounce lean pork chops | |
2 3/4 | Tomatoes, chopped | |
2 | Cloves garlic, minced | |
3/4 | Green bell pepper, chopped | |
3/4 | t | Dried basil |
1/3 | c | Black olives |
1 1/3 | c | Cooked rice, hot |
INSTRUCTIONS
In a large skillet, heat oil over medium heat. Add pork chops and lightly brown on both sides. Add the tomatoes, garlic, pepper and basil; cover. Simmer 25-30 minutes, turning pork chops once. Add the olives and continue to simmer over low heat 7-10 minutes. Arrange rice on a serving platter, place pork chops over rice, spoon sauce over the top and serve.
