INSTRUCTIONS
1. In a large bowl, mix together peanut butter, soy sauce, lime or lemon
juice, oil, cumin, garlic, and cayenne. Stir in pork cubes to coat well and
marinate, covered, at room temperature for 4 hours or overnight in
refrigerator. If using bamboo skewers, soak in water for at least 30
minutes to prevent burning.
2. Prepare a medium-hot fire. Lift pork cubes from marinade and thread onto
skewers. Grill an oiled rack, turning frequently and basting with reserved
marinade, until well browned outside and just cooked through, about 7-9
minutes. Serve with Peanut dipping sauce.
