INSTRUCTIONS
Hi, this is from Vegetarian Soup Cuisine by Jay Solomon. I just left out
the oil. I like his cookbooks a lot.
Dry sautee onions and garlic until they begin to sweat and are fragrant.
Add water, potatoes and salt and pepper, bring to a simmer, cook for 20
minutes. Stir in green beans and cook for 10 - 15 minutes more. Turn off
heat, stir in fresh herbs and let stand for 10 minutes.
Pour soup into a blender or food processor and process for 5 - 10 seconds
until smooth. Serve with warm, crusty bread.
