INSTRUCTIONS
Preheat oven to 375 degrees F. Butter a 12-inch oval casserole.
In a roasting pan combine pumpkin and 1/4-inch cold water. Cover tightly
with foil and bake 30 minutes, or until pumpkin is tender. Cut away rind
and strings, and cut pumpkin flesh into 2 x 1/2-inch slices. Toss apple
slices with sugar and lemon juice. In a heavy saucepan heat 1/2 stick of
butter over medium high heat. When bubbly add apple slices and stir well.
Add bourbon, raisins, cardamom and allspice. Bring to a boil, lower heat to
simmering, cover and cook 20 minutes. Add pumpkin slices and remove from
heat.
In a large bowl combine oats, flour and brown sugar. Cut remaining 1 stick
of butter into 16 pieces and squeeze into oat mixture with your fingers
until it forms lumps the size of small peas.
Preheat broiler. Spread apple-pumpkin mixture in casserole and top evenly
with oat mixture. Broil until top is sizzling brown, about 2-3 minutes. Let
rest 5 minutes before serving.
Yield: 8 servings
