INGREDIENTS
1 1/2 | c | Shreds of wheat bran cereal |
1/4 | c | Unsweetened applesauce |
1/2 | c | Nonfat buttermilk |
1/4 | c | Firmly packed brown sugar |
1/4 | c | Frozen egg substitute |

1 1/4 | c | All-purpose flour |
2 | t | Baking powder |

1/2 | t | Ground cinnamon |
1/4 | c | Raisins |

INSTRUCTIONS
Combine first 3 ingredients; let stand 5 minutes. Add brown sugar, egg substitute, and oil; stir well. Combine flour, baking powder, salt, and cinnamon; make a well in center of mixture. Add cereal mixture, stirring just until dry ingredients are moistened. Fold in raisins. Spoon batter into muffin pans coated with cooking spray, filling three-fourths full. Bake at 400ø for 20 minutes or until lightly browned. Yield: 1 dozen (150 calories and 19% fat each).
