INSTRUCTIONS
I've made red beans and rice a 'few' times (I'm from south Louisiana) and it's still not an exact science to me, but here goes: Drain water beans have soaked in overnight. Put into pot with twice as much water and add rest of ingredients. Bring to boil then simmer for about an hour until beans are tender. (Mashing a few beans helps thicken gravy.) And as with all Cajun cooking, don't follow any recipe exactly, just add and leave out whatever you think will make it taste good. Serve over hot rice. Sa c'est bon!
