INGREDIENTS
2 | lb | Red cabbage, finely shredded |
8 | Juniper berries, crushed | |
1/4 | pt | Boiling water |
1 | t | Salt |
8 | oz | Onions, chopped |
8 | oz | Apples, chopped |
2 | oz | Soft brown sugar |
1 | t | Caraway seeds |
1 | Bag bouquet garni | |
1 | T | Cornstarch |
3 | T | Malt vinegar |
1 | T | Cold water |
INSTRUCTIONS
Place red cabbage, junipers, 1/4 c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples,sugar, caraway seeds & bouquet garni. Cover & cook gently for 1 1/2 hours, stirring frequently. Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
