INSTRUCTIONS
Wipe chicken with a damp cloth; then, with a cleaver, chop, bones and all, in 2-inch sections. Place in a heavy saucepan. Boil water and pour over chicken. Bring to a boil again; then simmer, covered, 30 minutes. Meanwhile slice mushrooms, bamboo shoots and water chestnuts.
