Sorry, I don't have one for the Reuben, but as a long term vegetarian, I
have one for anyone who's trying to give up meat. ( I still love the taste
of corned beef -- the remembrance of it, anyhow.)
Layer the tomatoes, kraut on one piece of toast Top with Russian dressing
(or a combo of mayo and ketchup) Add the cheese slice(s) and melt in a
toaster oven. Top witht he other piece of toast.
If you want a hot sandwich, you might heat the kraut beforehand. It's not
QUITE on par with a real Reuben, but is a pretty good substitute if you
can't or don't want to eat the corned beef. Cheers! Ann
