Eggs, Dairy Rice 6 Servings

INGREDIENTS

2 Eggs; separated
3/4 c Cooked brown rice
1/8 ts Pepper
1/4 c Milk
1/4 c Flour
Oil or shortening

INSTRUCTIONS

Beat egg yolks until light in color. Blend in milk, rice, flour & pepper.
In another bowl, beat egg whites until stiff. Fold egg whites into rice
mixture. Drop by tablespoons into hot greased skillet to brown, turning
only once. Makes 12 fritters.
