Sliced ham cut into small dice( I have used 4 or 5 slices cooked crumbled bacon) |

INSTRUCTIONS

Melt butter in large saucepan and saute onion until transparent. Add rice
and cook, stirring constantly, for 5 min. or until golden. Add chicken
stock, stir, cover and simmer for 18 minutes or until liquid is absorbed,
but mixture is still creamy. Rinse peas in hot water to thaw, and drain
well. Add peas, diced ham or bacon, and half the cheese, stir and transfer
to a serving dish. Top with remaining cheese and serve at once.
