INGREDIENTS

960 g Chicken wings
1 T Black bean sauce
1 T Light soy sauce
1 t Sugar
3 Garlic cloves, finely
chopped
4 Fresh red or green chillies
finely chopped
1/2 t Ground white pepper

INSTRUCTIONS

Remove the final fingertip of the wings and the arm bone (the one
closest to the body). In a roasting dish, mix all the ingredients,
ensuring that the chicken wings are well coated. Leave to marinate  for
at least 1 hour. Preheat the oven to 180C/350F/gas 4.  Arrange the
wings on to the boned bases with the bone in the centre as  below.
