Whole garlic bulbs; plus 1 small garlic |

INSTRUCTIONS
Remove outside papery layer from garlic bulbs, leaving cloves attached. Rub
with olive oil, salt and pepper. Place on a small baking sheet and bake at
350 degrees for 20 to 25 minutes or until very soft. Mix minced garlic with
a little olive oil and brush on bread. Grill or toast until golden and
slice in half. Top with a slice of cheese. Cut off top of garlic bulbs and
discard. Place garlic on 2 small plates and serve with cheese toasts.
Scatter olives and scallions over plate and garnish with thyme.
Yield: 2 Servings
