INSTRUCTIONS
Rub the grouse all over with the butter including the inside cavity. Then
lay the bacon across the breast of the grouse.
Season generously with salt and pepper, put the thyme sprigs over breasts
and place in a hot oven for 10 minutes, then lower to a moderate oven for 5
more minutes (for rare) and 10 minutes (for well done).
