INGREDIENTS

| 1 | lb | Mesclun or mixed greens |
| 1/2 | c | Toasted walnuts |
| 1 | Shallot,; chopped | |
| 3 | tb | Walnut oil |
| 2 | ts | Raspberry vinegar |
| 1/4 | lb | Goat cheese |
| Salt | ||
| Pepper |
INSTRUCTIONS
Cut off beet tops. In a large serving bowl, toss beet tops with mixed greens and walnuts. Add beets to salad. In a skillet, saute shallot in walnut oil. Deglaze with vinegar. Pour this dressing over salad and toss. Sprinkle top with goat cheese. Season with salt and pepper and serve immediately.
