INSTRUCTIONS
Marinate the chicken in the above mixture for 1 hour, being sure to rub
some inside the chicken. Bake at 375 degrees for 1 hour or until done. If
you want to do this on a barbecue it is best to cut the bird in half the
long way, then marinate. Cook to your liking over medium-hot coals. This
recipe serves 4.
Comments: The wonderful thing about Greek cooking is that it is rarely
complex. You can bake this chicken or cut it in half to place on the
barbecue. Either way is most enjoyable and the olive oil helps keep it
moist.
