INGREDIENTS

1 250 gram pac runner beans; trimmed
15 g Butter; (1/2oz)
1 bn Salad onions; trimmed and sliced
1 142 millilit soured cream; (5fl oz)
3 tb Freshly chopped tarragon
Salt and freshly ground black pepper
1 Sprigs tarragon

INSTRUCTIONS

TO GARNISH
Cut the beans into 2. 5cm (1 inch) pieces on the diagonal. Cook in boiling
water for 7 minutes until tender. Drain and keep warm.
Melt the butter in a saucepan and saute the onions for 3-4 minutes. Stir in
the cream, tarragon, cooked beans and add seasoning to taste. Do not allow
to boil.
Spoon into a warmed serving dish, garnish with the sprigs of tarragon and
serve with grilled meats or fish.
