INSTRUCTIONS
This is another recipe for chocolate salami. The recipe suggests
serving it with whipped cream as a decoration.
Soak the raisins in warm water to cover until needed. Break up the
chocolate and place in a saucepan or heatproof bowl with the butter.
Place this over another saucepan of gently simmering water until
melted (it must not touch the water). Add the sugar, almonds, biscuit
crumbs, drained raisins, and candied peel and mix well. Remove from
heat. Stir in the egg yolks and let mixture cool completely.
Form mixture into a salami shape with your hands and place it on a
sheet of waxed paper. Seal the paper around it and refrigerate it
for several hours. At serving time, remove the waxed paper, slice the
salami and arrange the slices on a plate.
NB: For good presentation, don't slice it all. Cut about a third into
slices and serve on a long serving dish with the salami and some
slices already cut on the plate. Better yet, serve it on a cutting
board to fool the guests!
