INGREDIENTS

Canned peas, drained |

White sauce, medium thick or |

Cheese sauce |

Salt and pepper to taste |
INSTRUCTIONS
Combine first 4 ingredients and mix well with fork. Shape into 6 uniform
croquettes , dip in beaten egg, and roll in cracker crumbs. Fry in deep fat
(360-375F) until golden brown, about 10 minutes. Add peas to hot sauce,
season to suit taste, and pour around the croquettes.

NOTE: I usually make patties. Then you don't have to deep-fry. Just put a
little oil in a skillet and fry until golden brown. We also put
worcestershire sauce on them when I serve them without the sauce and peas.
Delicious on crackers too!
