Mix together the onions, green peppers, chiles, and garlic. Add the oil and
juice of 1 lime. Add the tomatoes and stir well to slightly break down the
tomato flesh. Adjust the seasoning with a good pinch of salt. The salsa
should have a good balance of flavours. More lime juice may be needed to
lift the other tastes. The salsa can be kept in the fridge for a few days.
