INSTRUCTIONS
How to Prepare the Potatoes: Preheat the oven to 350 F. Place the kosher salt evenly on a baking sheet. Place the potatoes on top of the salt and bake until tender, approximately 45-50 minutes. How to Prepare the Topping: Preheat a grill pan or broiler. Brush the scallions with olive oil and salt and pepper to taste. Grill on each side for 2 minutes and chop coarsely. Place the yogurt in a strainer lined with cheesecloth over a bowl. Let sit 30 minutes. Place the drained yogurt in a bowl, add the grilled scallions and season with salt and pepper.
