INGREDIENTS

1/2 c Dry bread crumbs
2 tb Parmesan cheese
2 ts Paprika
1 1/2 ts Dried thyme
1 ts Garlic salt
1/2 ts Cayenne pepper
1/2 c Buttermilk
800 g Skinless boneless chicken breast
1 1/2 tb Butter; melted

INSTRUCTIONS

1. Combine breadcrumbs through cayenne in shallow dish. Place buttermilk in
shallow dish.
2. Dip chicken in buttermilk, dredge in breadcrumb mixture, then place on
sprayed, foil-lined baking sheet. Drizzle butter over chicken and bake at
400F for 40 mins.
NOTES : Moist and tender with great flavour.  Take any leftover crumb
mixture and sprinkle or crumble over chicken pieces on baking sheet. Adds
extra crunchiness.
