INSTRUCTIONS
Mix flour, salt, pepper and saffron in pie pan. Dredge fish in flour
mixture.
Heat 2 to 3 tablespoons oil in medium skillet over medium heat. Add enough
fish fillets to cover bottom and saute approximately 3 minutes on each side
until fish is golden brown.
Remove fish to warmed serving platter. Add more oil and repeat until all
fish is cooked. Garnish with lime wedges. Makes 8 servings.
