INSTRUCTIONS
Prep: 10 min, Cook: 40 min.
Preheat oven to 350°F. Layer spinach, scallions and cottage cheese in a
greased baking dish. Combine remaining ingredients in a food processor or
blender. Season with salt and pepper to taste. Blend until smooth and pour
over cheese mixture. Bake 35-45 minutes, or until a knife inserted in
center comes out clean.
