INGREDIENTS
2 | lb | Boneless pork, cut into |
1-inch cube well trimmed | ||
1 | c | Red bell pepper, chopped |
1/2 | c | Onion, chopped |
1 | Barbecue sauce, 18 oz | |
2 | Baked beans, 16 oz each |
INSTRUCTIONS
Mix pork, bell pepper, onion and 1 cup of the barbecue sauce in a 3-quart or larger slow-cooker. Cover and cook on high 4-5 hours or on low for 8-10 hours until pork is very tender. Stir in remaining barbecue sauce and the drained beans. Makes enough for 2 dinners. Good spooned over corn bread, and served with a green salad.
