Smoked fillet of cod or haddock; cut into 1/2-inch cubes |
INSTRUCTIONS
Smoked cod or haddock should be available through any good fish store.
With it you can prepare this very hearty and warming chowder in just a few
minutes. The recipe is an old one.
Brown the pork in a Dutch oven. Add onion and saut. until the onion is
transparent. Add the potatoes and water to cover, salt and pepper to taste,
and bay leaf. Careful with the salt as the fish will add salt as well.
Bring to a boil and reduce to simmer. When potatoes are almost tender, add
the milk and fish and simmer for 10 minutes.
