INSTRUCTIONS
Pinch off the stem ends of the snow peas and remove strings, if any. Heat
the oil in a wok or high-sided large saute pan over high heat until very
hot. Add the garlic and ginger and saute over high heat until fragrant.
Add the snow peas and toss, stir-frying for about 2 minutes. Add the chile
paste, honey, and the 2 teaspoons of basil and cook until the snow peas are
crisp-tender, 1 to 2 minutes. Season to taste with the soy sauce, add the
almonds, and toss well.
To serve, transfer the snow peas to a serving platter. Garnish with the
basil sprigs and pickled ginger, and serve immediately.
