INGREDIENTS
1 1/2 | lb | Fillet of sole |
5 | T | Olive oil |
1 | c | Tomato juice |
3/4 | c | Bread crumbs |
1 | T | Oregano |
2 | Sprigs parsley, minced | |
Salt & pepper | ||
1/2 | Lemon, Juice of |
INSTRUCTIONS
Clean and wash fish. Grease a baking dish with oil and lay fillets in the bottom of a dish. Pour liquid around them. Combine remaining ingredients except lemon juice, and sprinkle over fish. Bake in a moderate oven (350F) until fish flakes easily, about 15 minutes. Do not overcook. Sprinkle fillets with lemon juice and serve immediately.
