Sopapillas are puffy little pillows of air surrounded by a crisp flaky
crust. They're good with butter or honey or whatever you like!
Combine flour, baking powder and salt. Cut in shortening thoroughly.
Sprinkle in water, 1 Tbsp at a time, tossing with fork until all flour is
moistened and dough almost clears the side of the bowl. Gather dough into a
ball. Cover and refrigerate 30 minutes. Heat 2" of oil. Roll dough into a
rectangle on lightly floured board. Cut into little 3" x 2" rectangles. Fry
till puffed and golden, turning once (about 2 minutes) Drain completely on
paper towels.
