INGREDIENTS

250 g Raw rice; (Basmati or long
; grain) (9 oz)
200 g Chicken breast; (7 oz)
200 g Cooked shrimps; (7 oz)
1/2 Red pepper
2 Stalks spring onions
2 Eggs
1 tb Oyster sauce
1 tb Light soy sauce
1 ts Pepper
2 tb Cooking oil
100 g Frozen green peas; (4 oz)

INSTRUCTIONS

Cook rice as per intructed and leave to get cold. Heat the oil and fry
chopped onions for 1 minute. Add cubed chicken and continue to stir over a
high heat until nearly done. Push to one side and crack in eggs. Stir until
cooked and cut up roughly. Add the rice and all seasoning and continue to
stir vigorously for 2 minutes. Add the frozen peas and continue to stir for
another 2 minutes. Serve hot with a side dip of chilli sauce.
