INSTRUCTIONS
1. Arrange the slices of speck on serving dishes.
2. In a small bowl combine the tomatoes, mozzarella, olives, and basil.
Season lightly with salt. Add the olive oil and mix everything well. Spoon
this mixture loosely over the speck, season with a few grindings of pepper,
and serve.
NOTE: Speck is a smoked ham that is a specialty of the Trentino-Alto Adige
region in northeastern Italy. It is available at many Italian markets or
specialty food shops.
