INSTRUCTIONS
Combine sugar, pepper, and cayenne in a small bowl. Heat a heavy skillet to
very hot & add pecans and saut. quickly to release their oils. Continue to
saut. for 1 minute. Sprinkle sugar mixture over pecans while constantly
tossing them to keep from burning. When the sugar starts to melt, add
butter, Worchestershire, & Tobasco and cook until liquid is evaporated.
Place on a sheet pan and spread out. Bake in a 325 degrees oven for 2
minutes to dry out. Keep your eye on them so as not to get them too dark.
Cool at room temperature and place in airtight jar at room temperature
until needed. Yields 2 pounds.
