INSTRUCTIONS
Preheat the oven to 425.
In a medium saucepan over high temperature, heat the water and butter until
they reach a rapid boil. Add the flour and stir until a soft dough is
formed, 1 or 2 minutes. Turn the heat down very low and cook, stirring, for
another 5 minutes to dry the dough out slightly.
Place the dough in an electric mixer. Using the paddle attachment, add the
cayenne sauce and cayenne powder. Mix well, then fold in the cheese. Add
the eggs one at a time, allowing each egg to be fully blended before adding
the next. When all the eggs have been incorporated, the dough should be
smooth and able to hold a peak.
Greasing the baking sheet. Season the dough with the salt and coarse
pepper, then place it in a pastry bag that has been fitted with a star
tube. Pipe rosettes about 1/2 inch diameter onto the baking sheet. Bake the
rosettes for about 20 minutes. Turn the oven down to 300 and cook for
another 20 minutes, or until the puffs are golden brown.
Serve the Spicy Cheese Puffs hot.
