INGREDIENTS

3 tb Vegetable oil
3 tb Rice vinegar
1 1/2 tb Soy sauce
1 tb Oriental sesame oil
2 ts Minced fresh peeled ginger
1 ts Sugar
1 Carrot; shredded
1/2 ts Chili oil or 1/4 ts red pepper
2 Green onions; sliced thin
1/2 Cucumber; seeded, peeled And chopped
1/4 c Chopped fresh cilantro

INSTRUCTIONS

Whisk all ingredients together in a large bowl. Serve over 12 oz. (dry
weight) of Japanese noodles. Serve well chilled.
