INGREDIENTS
2 | T | Butter |
1 | Onion, finely chopped | |
1 1/4 | c | Long grain rice |
1 | t | Chicken Stock Powder |
1/2 | t | Finely grated lemon rind |
1/2 | t | Ground nutmeg |
2 1/2 | c | Boiling water |
INSTRUCTIONS
Heat the butter in a large frying pan. Add the onion and cook for 2 minutes. Stir in the rice and cook, stirring, for 1 minute. Add the remaining ingredients. Bring to the boil, then cover and simmer over a very low heat for 20 minutes or until the rice is cooked and the liquid has evaporated.
