INGREDIENTS

4 lg Ripe tomatoes OR 6-cups chopped
2 lg Celery stalks; diced
1 lg Green bell pepper; diced
1 lg Onion; diced
1/2 c Cider vinegar
2 tb Sugar
2 ts Mustard seed
1 ts TABASCO pepper sauce
1 ts Salt

INSTRUCTIONS

In 4-quart saucepan, bring all ingredients to a boil. Reduce heat to low;
cover and simmer 15 minutes.
Uncover saucepan and simmer 45 minutes longer, stirring occasionally until
mixture has thickened slightly. Spoon into clean jars. Cover and store in
refrigerator up to 1 week.
Makes 3 1/2 cups.
