INGREDIENTS

1 1/2 c Chopped raw spinach leaves
1/2 c Watercress
4 Green onions; sliced
1/3 c Cashews
1/2 c Croutons
Vegan salad dressing (your favorite one)

INSTRUCTIONS

Combine the spinach, watercress, green onions, and cashews in a serving
bowl.  Spoon the dressing over the salad and toss. Eat immediately while
crisp.
