INGREDIENTS

4 Eggs or 2 eggs and 1/2 cup egg substite, beaten
1 tb Milk; optional
1/2 ts Garlic salt
1/8 ts Pepper
1 1/2 c Frozen hash brown potatoes with onions and peppers
1 pk Frozen chopped spinach; thawed, well drained
1/2 c Shredded Swiss; Mozzareall or Cheddar, cheese OR crumbled Feta cheese

INSTRUCTIONS

Combine eggs, milk, if using, garlic salt and pepper. Add hashbrowns,
spinach and cheese. Pour into well greased, 8" nonstick skillet. Cove and
cook over Medium heat, 10-12 minutes, until soft in center, but golden on
bottom. Remove from heat. Let stand, covered for 5 minutes. Cut in wedges.
