INGREDIENTS

1 lb Lean ground turkey
1 pk (9-oz) frozen spinach; thawed, well drained
1/4 c Plain bread crumbs
1/4 c Finely chopped onion
1/2 ts Garlic powder
1/2 ts Salt; if desired
1/4 c Refrigerated or frozen fat-free egg product; thawed
1 Bottle; (12-oz) creamy mustard-mayonnaise sauce*

INSTRUCTIONS

Here's a really delicious meatball recipe. It's from the Jan/Feb 1998 issue
of "Fast and Healthy" magazine. We don't always use the mustard dip, but
just serve them over some buttered pasta.
1) In medium bowl, combine turkey, spinach, bread crumbs, onion, garlic
powder, salt, egg product and 2 Tbls. of the mustard-mayonnaise sauce; mix
well. Shape into about 45 (1-inch) balls.
2) Spray large nonstick skillet with nonstick cooking spray. Heat over
medium-high heat until hot. Add spinach balls; cover and cook 8 to 10
minutes or until spinach balls are firm and centers are no longer pink,
turning occasionally. Keep warm.
3) Pour remaining mustard-mayonnaise sauce into small microwave-safe
serving bowl. Microwave on HIGH for 1 1/2 to 2 minutes or until thoroughly
heated. Stir sauce. Serve hot spinach balls with sauce.
