INGREDIENTS

1 Onion; Chopped
2 Cloves Garlic; Minced
1 pk Spinach – Washed; (10 Oz)
1 ts Lemon Rind; Grated
1 ts Dried Mint Flakes
4 Chicken Breast; Skinless
1/4 c Old Cheddar Cheese; Grated
1 cn Cream Of Chicken Soup

INSTRUCTIONS

Saute onion and garlic in lightly olied skillet - 5 minutes Stir in
spinach, lemon rind and mint, cook 2 minutes covered. Slice shicken
lengthwise (not all the way through) starting at the thick side. Stuff each
breast with 1 Tbsp. cheese Nestle chicken into spinach mixture with soup.
Simmer covered 20 to 25 minutes.
