Frozen spinach; copped, thawed, drained |

Grated pepper jack cheese; (I use two) (up to 2) |

Extra hot stuff; green chiles, salsa, hot pepper sauce, whatever you like |

Sometimes mushrooms; about 8 oz. sliced and sauted or other veggies |

Buttered bread crumbs |
INSTRUCTIONS
Saute onion in butter. Add additional butter and make a white sauce with
the flour and evaporated milk. Add cheese. When the cheese is melted, add
spinach and any other veggies or mushrooms you like. Put in a casserole and
cover with bread crumbs. Bake at 350 until hot and crumbs are slightly
browned.
