(10-oz) frozen chopped spinach; cooked and pressed dry |

INSTRUCTIONS
Melt butter in a saucepan. Add flour and combine well. Gradually add milk,
stirring until sauce thickens. Add salt and pepper. Beat egg yolks. To
yolks add about a cup of hot white sauce. Then add spinach and cheese. Stir
well. Beat egg whites until stiff. Fold into spinach mixture. Pour into
individual greased baking dishes and bake at 325° for 30 minutes or until
firm. Two individual dishes may be cooked in the microwave on medium high
for 4 to 5 minutes. Yield: 8 to 10 servings.
