INSTRUCTIONS
Preheat oven to 375.
Butter a souffle dish (or 1-2 quart baking dish). Mix together cornmeal,
sugar & salt. Stir dry mixture into hot milk in saucepan on medium heat.
Turn to low & stir in butter. Remove pan from heat & beat in egg yolks &
baking powder. Let cool somewhat. Stir in cheddar & Swiss cheeses. Fold in
egg whites. Pour into prepared pan. Bake until golden & puffy. Serve
immediately.
