INSTRUCTIONS
Stir together soy, sake, oil, sugar, ginger and garlic in a large shallow
bowl. Set aside. Place each slice of meat between two pieces of clear
plastic wrap. Working from center to edge, pound lightly with the flat side
of a mallet to 1/8" thickness. Remove plastic wrap. Cut each slice in half
crosswise. Place meat in marinade; cover and marinate at room temperature
30 minutes or in fridge 2 hours. Meanwhile cook beans in small amount of
boiling water for 4 minutes. Add green onion and cook 1 minute more. Drain.
Drain meat, discarding marinade. Place two green beans and one green onion
lengthwise on one of the beef slices. Beginning at a long end of the slice,
roll meat tightly around the vegetables. Tie with Kitchen string. Repeat
for remaining meat and vegetables. Spray the unheated rack of a broiler pan
with non-stick coating. Place rolls on rack. Broil 3-4" from heat 6-7
minutes, turning once, until meat is just done. Remove rolls from broiler;
remove strings. Bias-slice each roll into 1" pieces. Place on a serving
plate. Makes 16-20 pieces.
