4 | oz | Mozzarella Cheese, shredded |
1/4 | c | Parmesan Cheese, freshly |

INSTRUCTIONS
Put hot rice in serving bowl. Mix in butter, mozzarella, and freshly grated Parmesan cheese. Add basil; fluff rice with fork before serving. NOTES : Butter and cheese metling in a bowl of hot steamed rice is one of the joys of the Italian table.
