INSTRUCTIONS
Adapted from Healthy Side Dishes In heavy saucepan, over med heat, warm olive oil. Add leeks and saute 4 - 5 min, stirring occasionally, until leeks are softened and translucent. Add lemon juice and spinach leaves. Reduce heat, cover and cook 4 min without removing lid. Uncover and toss to mix well. Add salt, pepper, lemon zest and vinegar and cook, stirring, 1 min longer. Transfer vegetables to serving dish. Servings: 4 Prep Time: About 10 min Cooking Time: About 12 min. Absolutely wonderful flavor. Extremely quick to fix.
