INGREDIENTS

1/2 | lb | Fresh mushrooms |
3 | T | Oil or lard |
1/4 | t | Salt |
1 | T | Sherry |
INSTRUCTIONS
Trim off leaves and tough ends of celery. Cut stalks diagonally in 1-1/2 inch sections. Slice fresh mushrooms. Heat oil. Add celery and stir-fry 2 to 3 minutes. Add mushrooms; stir-fry until they soften (about 2 minutes more). Sprinkle with salt and sherry and stir in quickly. Serve at once. NOTE: If the celery is not tender, blanch it first.
